The heist subgenre, although it's often lumped into the more vague 'crime' genre, is alive and well. And with each story, there's bound to be a twist, a betrayal, or some other surprise to keep you watching. Both the criminal and the law enforcement tasked with catching them are cunning and determined to reach their goals whatever means necessary. The cat and mouse games give us two sides to root for. A few directors, like Steven Soderbergh, Quentin Tarantino, Christopher Nolan, and even Wes Anderson (yes, that Wes Anderson), have made heist films that hold up after more than just a few years.
Really, what we want, is to see how the criminals plan the heist, and most importantly, if they manage to get away. But as viewers, we don't care about the reward at the end all that much. Money isn't always the prize at the end, but it's usually a pretty good motivator.
It's a premeditated crime (and sometimes more than just one crime) with a group of criminals who do everything they can to elude the authorities.
